I’ve been asked about this recipe so much that I thought I’d give it it’s very own post. When you try them you’ll see that these balls totally deserve it!
Ingredients
2 cups Medjool dates (don’t go for the packet pitted dates as you need this variety for their mushiness)
1 cup trail mix or mixed (unsalted) nuts – almonds work well
1/2 cup raw cacao
1 cup coconut
Directions
1. Place nuts/ trail mix in food processor and blend on high until the nuts are finely ground.
2. Add cacao.
3. Add the dates one at a time through the feed tube of the food processor while it is running. What you should end up with is a mix that appears rather like fudge.
4. Roll into balls and roll in coconut.
5. Place in freezer until ready to serve – I eat them straight from the freezer as they are so nice and chewy that way (cut them in half if they’re too hard, I find they soften pretty quickly anyway).
Try and stop at one (note: this is basically impossible!) xx

Hey Rachel, I made these a few weeks ago from the recipe on My Good Roots and even though I put in quite a few extra dates I ended up with brownie crumbs (still delicious but not very practical to take to work!)

Oh really? I usually buy the medjool dates & leave them all day so they are really soft… When they blend it then turns into a mushy mixture (I let it blend for at least a full minute). Hope they work for you next time lovely! Xx
When I made them I used packet dates (as that is all I had) and I just had to add about a tablespoon of water to get it to the desired consistency. I added walnuts and pecans, and then LSA (linseed, sunflower and almond crumbled) and I also used dried apricots and sesame seeds.

Good tip Jas! L.S.A is so good… That reminds me, forgot to add that I put a tablespoon or two of chia seeds in mine now too. Load up on the goodness I say! Xx
